Classic Greek comfort food: fine vermicelli nests lightly toasted in olive oil and simmered into a silky, sweet tomato and cinnamon broth, finished with lemon juice.
Heat 2 tbsp olive oil in a wide pot. Break the vermicelli nests into pieces and toast over medium heat, stirring constantly, until golden brown and nutty. Remove to a bowl.
Add remaining olive oil to the pot. Sauté onion and garlic for 5 minutes. Stir in tomato paste, grated tomatoes, cinnamon, salt, and pepper, simmering for 5 minutes.
Pour in the hot stock and bring to a boil. Add the toasted vermicelli and cook at a gentle simmer for 6-8 minutes until tender and glossy.
Remove from heat, stir in fresh lemon juice, and ladle steaming hot into shallow bowls. Dust with freshly cracked black pepper.
