Est. Time: 25 min (plus chilling)  •  4 Preparation Steps

Chef's Menu Description

Traditional northern German red herring salad: tender pickled Matjes herring fillets, cooked beetroot, tart apples, pickled gherkins, and hard-boiled eggs in a creamy sour cream dressing.

Ingredients

  • • 300g pickled herring fillets (Matjes), diced into 1.5cm cubes
  • • 200g cooked beetroot, diced
  • • 1 crisp tart apple (Boskoop or Granny Smith), peeled and diced
  • • 2 pickled dill gherkins, finely diced
  • • Dressing: 150g sour cream (Schmand), 2 tbsp mayonnaise, 1 tbsp gherkin brine, 1 tsp Dijon mustard, salt, sugar and white pepper
  • • 2 hard-boiled eggs sliced, fresh dill

Preparation Steps

1
Phase 1

Dice the herring fillets, cooked beetroot, apple, and dill gherkins into uniform small cubes.

2
Phase 2

Whisk Schmand, mayonnaise, gherkin brine, mustard, salt, sugar, and white pepper in a large bowl until smooth.

3
Phase 3

Gently fold the diced ingredients into the creamy dressing until the salad turns a vibrant, gorgeous ruby pink. Cover and chill for at least 2 hours so flavors meld.

4
Phase 4

Garnish with sliced hard-boiled eggs and fresh dill sprigs. Serve with buttered dark rye bread.
