Est. Time: 30 min (plus baking)  •  4 Preparation Steps

Chef's Menu Description

Upside-down Provençal tomato tart: ripe heirloom tomatoes caramelized in balsamic vinegar, olive oil, and fresh thyme, baked under a flaky puff pastry crust and flipped with goat cheese.

Ingredients

  • • 1 sheet all-butter puff pastry (rolled to 26cm disc)
  • • 600g ripe heirloom plum tomatoes or cherry tomatoes, halved
  • • 2 tbsp balsamic glaze and 2 tbsp olive oil
  • • 1 tbsp brown sugar, 1 tbsp fresh thyme leaves
  • • 100g creamy French goat cheese (chèvre) or feta, crumbled, fresh basil

Preparation Steps

1
Phase 1

In a 24cm ovenproof skillet, heat olive oil, balsamic glaze, sugar, and thyme. Arrange tomatoes cut-side down tightly packed in the pan. Cook for 5 minutes until caramelized.

2
Phase 2

Lay round puff pastry sheet over the hot tomatoes, tucking edges down around inside rim of pan.

3
Phase 3

Bake at 200°C for 25-30 minutes until the puff pastry is deep golden-brown, crisp, and puffed.

4
Phase 4

Let rest for 5 minutes, then invert carefully onto a serving plate. Top warm caramelized tomatoes with crumbled goat cheese and fresh basil.
