Est. Time: 20-30 min  •  4 Preparation Steps

Chef's Menu Description

A wholesome, deeply comforting soup crafted from slow-simmered stock, aromatic garden vegetables, and fresh herbs, served with crusty bread.

Ingredients

  • • low-calorie cooking spray
  • • 2 red onions, (peeled and finely sliced)
  • • 2 brown onions, (peeled and finely sliced)
  • • 3 garlic cloves, (peeled and finely sliced)
  • • 1 tbsp balsamic vinegar
  • • 1 tbsp Henderson's relish (or Worcestershire sauce)
  • • 1 litre boiling water
  • • 1 vegetable stock pot
  • • 2 beef stock cubes

Preparation Steps

1
Phase 1

Spray a large saucepan with low-calorie cooking spray and set on a medium heat. Add the onions and garlic, and fry for 10 minutes. Don't stir too much, as you want the bottom to brown to give the soup its rich colour.

2
Phase 2

Add the balsamic vinegar and Henderson’s relish and stir. Pour in all of the water, then add the stock cubes and vegetable stock pot.

3
Phase 3

Continue to simmer for 25-30 minutes.

4
Phase 4

Serve the soup with a garnish of your choice!
