Tender French durum wheat berries (blé Ebly) cooked pilaf-style with sweet shallots, white wine, vegetable broth, and fresh garden herbs, finished with butter and Comté cheese.
Melt half the butter with olive oil in a sauté pan. Cook shallots over medium heat for 3 minutes until translucent.
Add Ebly wheat berries and stir for 1 minute until coated and glistening. Pour in white wine and let reduce completely.
Pour in hot broth, cover, reduce heat to low, and simmer for 10-12 minutes until all broth is absorbed and grains are tender-chewy.
Stir in remaining butter, fresh herbs, and grated Comté. Season with salt and pepper and serve warm.
