Legendary traditional British steamed suet sponge pudding studded with plump currants, sultanas, and lemon zest, gently spiced and served with lashings of warm vanilla custard.
In a mixing bowl, combine flour, suet, currants, sultanas, sugar, and lemon zest. Stir in milk to form a soft, rollable dough.
Shape dough into a cylindrical roll (approx. 20cm long).
Wrap loosely in buttered baking parchment pleated in the middle to allow room for the suet sponge to rise. Secure outer foil wrapping.
Steam over boiling water for 1.5 hours. Unwrap, slice into thick rounds, and drown in hot vanilla custard.
