Beloved traditional British steamed suet pudding: light suet pastry spread with rich raspberry or strawberry jam, rolled into a cylinder, and steamed until light, served with hot vanilla custard.
Mix flour, suet, and salt in a bowl. Add milk and mix to a soft, pliable dough. Roll out on a floured surface to a 20x30cm rectangle.
Spread jam evenly over the pastry, leaving a 1.5cm border clear around all edges to prevent leaking.
Loosely roll pastry from the short end into a spiral cylinder. Wrap loosely in buttered parchment paper pleated in the center to allow expansion, then wrap in foil and tie ends.
Steam over boiling water for 1.5 to 2 hours. Unwrap carefully, slice into thick rounds, and serve swimming in hot English custard.
