Chef's Menu Description

A distinguished culinary classic crafted with authentic techniques and finest ingredients, offering rich depth of flavour and elegant presentation.

Ingredients

  • • 1 whole red chilli (finely chopped - no need to remove the seeds (depending on how hot you like it!))
  • • 160 ml white wine vinegar
  • • 2.5 tbsp granulated sweetener
  • • 1 tsp sea salt
  • • 1 shallot (peeled and grated)
  • • 2 cloves garlic (peeled and grated)
  • • 2 tsp tomato puree
  • • 1 tsp honey
  • • 1/4 tsp xanthan gum (you may need a little more or less)
  • • low calorie cooking spray

Preparation Steps

1
Phase 1

Spray a small pan with low calorie cooking spray, then fry off the garlic, shallot and chopped chilli over a medium heat until they have started to colour slightly.

2
Phase 2

Pour in the white wine vinegar, then add the sweetener, salt and tomato puree. Stir well and bring to the boil.

3
Phase 3

Stir in the honey, allow to simmer for a minute then remove from the heat.

4
Phase 4

Add the xanthan gum a sprinkle at a time, whisking well after each addition. Continue adding and whisking until the sauce has thickened to the right consistency. Check the taste and add a little more sweetener if necessary.

5
Phase 5

Allow to cool, then pour into an airtight jar or bottle and keep in the fridge until you're ready to use.
