Chef's Menu Description

A traditional artisan bake offering a delicate, buttery crumb and golden exterior, served fresh with clotted cream, preserves, or rich salted butter.

Ingredients

  • • 100 g butter (softened)
  • • 150 g granulated sweetener
  • • 1 egg (beaten)
  • • 2 tsp ground cinnamon
  • • 200 g plain flour
  • • 1 tsp baking powder
  • • low calorie cooking spray
  • • pinch of salt

Preparation Steps

1
Phase 1

Pre-heat the oven to 160ºC and spray baking sheets with a little low calorie cooking spray.

2
Phase 2

Place the butter and sweetener in a mixing bowl and beat together until light and fluffy. This will be quicker and easier if you use an electric hand whisk.

3
Phase 3

Add the egg and beat for another minute.

4
Phase 4

Sift the flour, cinnamon and baking powder into the bowl, add a pinch of salt and mix thoroughly with a spoon.

5
Phase 5

Tip out onto a lightly floured surface and knead gently until it forms a smooth dough.

6
Phase 6

Roll out to 2mm thickness and cut into star shapes using a 6cm cutter.

7
Phase 7

Place the stars on the baking sheet, leaving an inch or so between them.

8
Phase 8

Roll the scraps together and continue cutting out until all the dough has been used. You should get 40 stars with a 6cm cutter.

9
Phase 9

Bake in the oven for 15 minutes until the biscuits are golden.

10
Phase 10

Leave on the tray for 5 minutes, before transferring to a cooling rack.
