Microwave Ginger Sponge Pudding

Est. Time: 20-30 min  •  5 Preparation Steps

Chef's Menu Description

A moist, comforting sponge pudding steamed or baked to perfection, drenched in warm pouring syrup or rich toffee sauce.

Ingredients

  • • 125 g self-raising flour
  • • 125 g reduced-fat spread ((plus a little extra for greasing))
  • • 60 g granulated sweetener
  • • 60 g caster sugar
  • • 2 medium eggs
  • • 1 tsp baking powder
  • • 1 tsp vanilla extract
  • • 1 tbsp ground ginger
  • • 4 tbsp agave syrup

Preparation Steps

1
Phase 1

Grease a 1.2L pudding basin with reduced-fat spread. Cut a circle of non-stick baking paper to fit into the bottom of the dish. Spoon the agave syrup on top, and roughly spread out.

2
Phase 2

Add the flour, spread, sweetener, caster sugar, eggs, baking powder, vanilla extract, and ground ginger to a mixing bowl. Whisk with an electric whisk for 2 minutes — until light and creamy

3
Phase 3

Scrape the cake mixture into the bowl, on top of the syrup layer.

4
Phase 4

Cover the basin and cook in the microwave for 6 minutes — until a knife inserted into the centre comes out clean. Leave to stand for 5 minutes.

5
Phase 5

Loosen round the edges of the basin with a knife, and place a plate on top. Flip over onto the serving plate, then slice and serve.
