Chef's Menu Description

Generous chunks of fresh, sweet Atlantic lobster meat lightly dressed in delicate citrus herb mayonnaise, piled high into a golden, butter-toasted split-top brioche roll.

Ingredients

  • • 500g cooked fresh Maine lobster meat (claw, knuckle and tail), cut into bite-sized chunks
  • • 4 split-top New England hot dog buns
  • • 3 tbsp good quality mayonnaise
  • • 1 rib celery, very finely minced
  • • 1 tbsp fresh lemon juice
  • • 1/4 cup salted butter, melted (for toasting buns)
  • • 1 tbsp fresh chives, minced
  • • 1/4 tsp sea salt
  • • 1/8 tsp freshly cracked white pepper
  • • Kettle cooked crisps and dill pickle spear, to serve

Preparation Steps

1
Phase 1

Gently toss chilled lobster meat with mayonnaise, minced celery, lemon juice, salt, and white pepper in a bowl (keep it light to showcase sweet lobster).

2
Phase 2

Heat a flat griddle or skillet over medium heat; brush the outer sides of split-top hot dog buns generously with melted butter.

3
Phase 3

Toast the buns on both outer sides for 2-3 minutes until golden brown and crisp with a soft warm center.

4
Phase 4

Open the toasted buns and stuff generously with the chilled dressed lobster meat.

5
Phase 5

Garnish with fresh minced chives and serve immediately with crunchy potato crisps.
