Ingredients

  • • 500g 80/20 ground chuck beef, divided into four 120g loose balls
  • • 4 slices American cheese or sharp cheddar
  • • 2 soft brioche or potato burger buns
  • • 2 tbsp unsalted butter, softened
  • • 1 small sweet onion, sliced paper-thin
  • • Dill pickle slices
  • • FOR THE BURGER SAUCE:
  • • 1/4 cup mayonnaise
  • • 2 tbsp ketchup
  • • 1 tbsp sweet relish
  • • 1 tsp yellow mustard
  • • 1/2 tsp garlic powder
  • • 1/2 tsp smoked paprika
  • • Coarse salt and freshly cracked black pepper

Preparation Steps

1
Phase 1

Whisk mayonnaise, ketchup, relish, yellow mustard, garlic powder, and paprika in a bowl; chill until needed.

2
Phase 2

Butter the cut sides of potato buns and toast on a hot flat griddle until golden and crisp; set aside.

3
Phase 3

Heat a cast iron griddle or skillet over high heat until smoking hot.

4
Phase 4

Place two cold beef balls on the dry smoking griddle; immediately place a piece of parchment over each and press down hard with a heavy burger press for 10 seconds to create ultra-thin patties with lacy edges.

5
Phase 5

Season aggressively with coarse salt and black pepper; top with paper-thin onion slices; cook undisturbed for 2 minutes until edges are deeply caramelized and crispy.

6
Phase 6

Scrape under patty with a sharp spatula, flip, and immediately top each with a slice of American cheese; stack one patty on top of the other; cook for 1 minute until cheese melts.

7
Phase 7

Spread burger sauce on bottom bun, add pickle slices, place double smash patties with melted cheese, cap with top bun, and serve immediately.
