An enticing artisan creation, freshly prepared with vibrant seasoning and served with complementary accompaniments.
In a small cup or bowl, beat 2 eggs with half the sliced red onion, diced tomatoes, shredded cabbage, minced green chili, salt, and black pepper.
Heat 1 tablespoon of vegetable oil in a wide flat tawa or skillet over medium-high heat; pour the seasoned egg-vegetable mixture and tilt the pan so it spreads into a wide, thin circle matching the size of the chapati.
Fry for 2 minutes until the bottom is golden, then carefully flip the omelette over.
Immediately place 1 warm chapati directly on top of the cooking omelette in the pan, pressing lightly so the hot egg adheres to the chapati for 30 seconds.
Slide the chapati-omelette onto a clean chopping board (egg side up) and roll tightly into a snug cylinder ('rolled eggs' / Rolex).
Wrap the lower half in paper and serve piping hot as Kampala's favourite street bite.
