Est. Time: 35-45 min  •  6 Preparation Steps

Chef's Menu Description

An enticing artisan creation, freshly prepared with vibrant seasoning and served with complementary accompaniments.

Ingredients

  • • 2 cups dried black-eyed peas (soaked and skins rubbed off)
  • • 1 medium red onion, roughly chopped
  • • 2 scotch bonnet chillies (atarodo), chopped
  • • 1/2 cup water (use as little as possible for thick batter)
  • • 1 tsp salt
  • • Vegetable oil, for deep frying
  • • Agege bread or warm Ogi (pap), to serve

Preparation Steps

1
Phase 1

Soak black-eyed peas for 15 minutes, then rub between palms or pulse briefly in a blender with water to peel the skins; rinse in water, allowing floating skins to spill over the edge.

2
Phase 2

Place peeled white bean cotyledons into a high-powered blender with chopped onion, scotch bonnets, and minimal water (1/2 cup); blend into a very thick, smooth paste.

3
Phase 3

Transfer batter to a deep bowl; whisk vigorously with a wooden spatula or hand mixer for 8-10 minutes until light, fluffy, and noticeably doubled in volume.

4
Phase 4

Gently fold in salt just before frying (salting too early breaks down the aerated bubbles).

5
Phase 5

Heat 3 inches of vegetable oil to 180°C; drop rounded spoonfuls of batter into the hot oil; fry for 4-5 minutes, turning occasionally until golden brown and puffed.

6
Phase 6

Drain on paper towels and serve immediately crisp and hot tucked inside soft Agege bread.
