Fragrant grains expertly cooked with seasonal aromatics, fresh herbs, and rich stock for a satisfying, flavourful centerpiece.

Ingredients

  • • 3 cups premium grain (long-grain rice, broken rice, teff, maize flour, or yam flour)
  • • 4 cups water or rich vegetable/meat broth
  • • 2 tbsp cold-pressed oil or butter
  • • 1 medium onion, finely chopped (for rice and pilaf dishes)
  • • 1 tsp sea salt and traditional spices (cumin, cardamom, turmeric or bay leaves)

Preparation Steps

1
Phase 1

Wash grains thoroughly until water runs clear, or bring seasoned water to a rolling boil for swallows and doughs.

2
Phase 2

Gradually add grain or flour into boiling liquid, whisking or folding vigorously to prevent lumps.

3
Phase 3

Cover tightly with a heavy lid and steam on lowest heat for 20-25 minutes until grains are tender and fluffy, or swallow becomes pliable and smooth.

4
Phase 4

Form into smooth swallow portions or fluff rice gently with a wooden fork.

5
Phase 5

Serve steaming hot as the foundational base for African stews, curries, and soups.
